Dark Chocolate

Must have :

  • A shiny surface
  • A warm and creamy color
  • A snap when broken
  • A deep and rich cocoa flavor
  • 60-75% cocoa content
  • Delicious lingering taste in the mouth
  • Bitterness without sourness, with a hint of acidity

Milk Chocolate

Must have :

  • At least 30% cocoa content
  • A good balance between the cocoa and the milk
